Ingredients of Gajar ki Kheer (Carrot Kheer)
- You need 1 kg of Red Carrots.
- It's 2-3 Tbsp of Clarified Butter (Ghee).
- You need 1 Litre of Milk.
- It's 1/2 Cup (100 g) of (or as per taste) Sugar.
- It's as needed of Black Cardamom Powder or Milk Masala Powder to sprinkle on top.
- Prepare as needed of Slivered Almonds for Garnishing.
On the other hand, in Carrot Kheer, very less amount of Ghee and nuts are used. Gajar Ka Halwa is a slower cooking recipe than Carrot Kheer. Carrot kheer or Gajar ki kheer is a healthy and delectable sweet pudding made up of sweet organic carrots, milk and jaggery. This carrot kheer tastes as delicious as it looks.
Gajar ki Kheer (Carrot Kheer) step by step
- Wash carrots and peel the skin..
- Remove the thick yellow stem inside it using a potato peeler..
- Grate carrots, either in the food processor or manually..
- Heat ghee in a big wok (kadhai) and saute grated carrots in it for 8 to 10 minutes or till water evaporates and lovely aroma starts coming out of it..
- Add milk. Stirring continuously, cook on high flame till boil comes. At this stage, if you want you can add reserved milk-cream (malai) into it.
- After the first boil, simmer the gas stove and let it cook for about an hour, stirring occasionally in between..
- When milk thickens slightly, add sugar..
- Cook for 10 minutes more and switch off the flame..
- At the time of serving sprinkle black cardamom powder or Milk Masala Powder..
- Garnish with slivered almonds and serve with love..
It is very popular in South India and referred as Carrot payasam. Gajar ki Kheer is not as popular as Gajar ka Halwa so as I was looking for sweets (dessert) recipe ideas for a Diwali potluck party and had finally zeroed in on Gajar ka Halwa (Carrot Halwa).
